Hi! It has been a while, yes I know. I have missed you, well you reading me, or me writing for someone out there.
I have been busy, living but a little bit confused of what should I write about. My Blog is Called Cabo, and yes, I happen to live in this paradise called Los Cabos, so basically my intention with these lines is to report to you the amazing things you can experience here, weather you live in Cabo or you are a snowbird just coming in the winter, or our must valuable tourists visiting us every year.

Any way, I am working on something really cool, I have a sweet tooth so be prepared out there I am giving you a top 5 of the best desserts in Cabo.

Las Mañanitas

Is it your Birthday? Feliz cumpleaños!!

Well, let me tell you the Mexican way, normally you would literally wake up the Birthday person with a special song, and there are many versions, but of course the one with Mariachi Band is our favorite. Here the lyrics and translation:

Translation of "Las Mañanitas" is the diminutive of "Mañanas", so it literally means Little Mornings.

The origin of this beautiful song is pretty much unknown, but has been for many generations a very sweet and joyful song for Mexicans. Here a link to one of my favorite versions of it "Las Mañanitas" by Alejandro Fernandez

What if I were Mexican?

What is culture? What if you were born in India or Zimbabwe or New Zealand? Well must probably you will speak another language, practice another religion and had a whole different way of behavior and diet, etc.

Me, I was lucky enough to be borne in a place of earth with the nicest weather, lots of different ecosystems, a great variety of flora and fauna, eleven thousand kilometers of coast with the most amazing beaches in the world... a place than now is considered Mexico, where we speak Spanish, worship Virgen de Guadalupe and eat hot spicy food... well, at least the majority of its residents.

I will talk you a little bit into our culture just in case you are interested, just as an useful tool for you when you visit or decide to live in our beautiful area of this world. 

Arriba el Mariachi!!

Yes! you would know all lyrics, sing along and totally relate to Mariachi Music. The word comes from the french "marriage" it is basically a pretty cool mix of music, beats, and instruments from our ancestors the Aztecs, the Spaniards and the slaves from Africa, such a delicious synergy, right?

Well, what would Mexico be without the taco? It is the most representative food of our country and you really should know this: if you have had tacos abroad Mexico, well believe me you have not had the REAL TACO. If you were Mexican you would sure eat many of these delicatessen every week. And there are thousands of hundreds of different tacos, they change depending on the State, there are even blue tortillas from blue corn (my favorite), but here are the most traditional ones:

• Quesadilla - Cheese Taco
• Taco Al Pastor - Pork marinated Taco
• Taco de Asada - Beef Taco
• Taco de Carnitas - Pork Taco
• Taco de Pescado - Fish Taco
• Taco de Camarón - Shrimp Taco

Yes, you probably will have more human contact than what you do now. When we encounter someone we know, we greet with one kiss on the cheek, well more like a touching cheeks. Some people may find this too personal, or invasive... if you really just want to keep your distance, a hand shake would do just fine! There are different levels of closeness, and yes I consider myself one of the ones that not only do the cheek but also a little hug, if I love you, like you, care about you, I will definitely give you a kiss a hug and a big smile, just because that is me.

Mexican Time

Well, if they said meet you at 8, you must probably would appear at 9:45. It is a little bit shameful, but it is the true in most cases. Why would not take time seriously, why we are not slaves of the clock? I do not know. Sometimes I get frustrated when I did everything to get to a place on time, and they keep me waiting for 40 minutes or more, not nice, I know! Sorry if you have to experience anything like this, believe me we are working on it. Have I forgotten appointments? Yes, and I have apologized. But have some faith, there are a lot of friends and family that are always on time everywhere, every time. 

1, 2, 3 shots of Tequila

Are you feeling more and more Mexican by now? I bet you are ready for Tequila! Here, we drink it to celebrate, at bars, clubs, at home. We like it as a digestive, we mix it with soda, lemon, we cook with it, have tequila ice cream, tequila shrimps and tequila cake. Ancestral drink, part of our history and a great heritage to the world. You know every good story starts with "We were drinking tequila when..." So come to Cabo, to Guadalajara, Mexico City, Oaxaca... and drink up with your tequila shots!! 

So I hope this gets you a little bit closer to understand us, don't try too hard, just accept us and love us. At the end, yes, we are all the same, we breath the same air, it does not matter which part of this planet you are right now, we all aim for acceptance, love, success, respect. We protect our loved ones we live and then we die. We take vacations, we make memories, we dream of the beach in our feet... So don't you wait for it, live now. Cabo is awaiting you with its sun, beaches, adventures and "Choyeros" (folkloric name for the ones borne in Baja)... lots of fun and peace, your hammock, your "margarita" and your book.

AZTEK - What a great novel!!

Is it a tragedy? Was it meant to be so sad, so bloody and unfair?  I just read one book that really marveled me, one that will always be in my personal library as a treasure, ASTEK by Gary Jennings.
This historic novel about the life of an "mexica" man, who lived and travel all around Mexico before it was conquered and even witnessed how the Aztecs took the news of the first men arriving from the oceans. The book was published in year 1980 and 34 years later, here I am, a Mexican lady, amazed and really eager to know more about my ancestors.

There is no doubt of how much history and culture the "Aztecs" left in this land, all the beauty of its glorious times are showed in its pyramids and I bet there is still more to be discovered about them.

Anyway, this is just a teaser, I do not want this words to be a spoiler, but really give you the idea of the great things you will discover in this novel:

1. You will find the names of Aztec gods and goddesses, many of them inspiration of many places, even names of people, yes here in Mexico and abroad.
2. Did you know women actually were the regents, even were adored in some places of America? One of them was god, judge, regent all at the same time. 
3. This thing of shaving ourselves, well... comes from old times, with the Purhépechas from Michoacán! Chewing gum, yes, also from old times with the Olmecas.
4. Find out why the first Spaniards that arrived in our land were considered gods, what was the impression of the locals when they saw their big ships, their dogs, horses and fire weapons for the first time.
5. And imagine the faces of the Spaniards when as a tribute, Aztecs would give them presents of gold, and rubies and many other treasures. 
6. Sadly you will see how one woman in particular took a very important place in the history, even if she was "indian", she took part with the Spaniards and made a whole difference in the results.
7. How Tenochtitlan residents, warriors and Cuauhtemoc survived a site of almost 3 months, how they honorably made it until the last moment, giving all the resistance humanly possible to the conquerors, some died there, some finally left. But all of them were honest, brave Aztecs fighting for their land, their future.
8. And finally, there was a huge element in the Conquering of the Americas, that affected more than any man, more than any weapon... you will discover it here too.

I know that it was the "tonali", destiny of the Aztecs, and that is how on August 13th. 1521 Hernán Cortés and its soldiers took whatever was left of the Great Tenochtitlan, the magic and pride capital of "El Unico Mundo", a place that before them, before the small pox, and the parsimony of the Spaniards, was paradise, full of marble, and floating gardens and rivers and white buildings.

Can we still inherit the best of both nations, the Aztecs and the Spaniards? Could we be truthful but astute; courageous but cautious; meditative but still able to take an opportunity when you see it. Could we be respectful to the god of the sun, the god of the rain and the god of the war, respect animals and the nature and adore it but still be wise to know that we do not need human sacrifices, and be people of good hearts and generous with each other?

May the future conquests of humanity bring only education, food, water and hope to the areas that need it. May there not be any more blood in the name of gods, money or any other selfish reason.

You must know more than me about the perfect souvenir, I guess classics are tequila, key chain, refrigerator magnets and shot glasses. But you can also get a little bit more "out of the box" and try:
Mezcal - It is a destilled beverage from Maguey, just as the Tequila, but with a different production process, mainly I can tell you Tequila is industrialized while Mezcal is down to earth, it is artisanal and that is what you taste in it. This is really IN everywhere in the world, it is the most organic and the most traditional thing. Instead of using lime as with Tequila, this one is great with orange, mmmm!!! So try some, get advices from conoceurs, and prove me wrong, but YOU WILL NOT GET HANGOVER!!
Zarape - Blanket made with 100% wool. Perfect way to cover yourself with Mexican colors and designs.
Mexican EcoBag - This is the bags that my grandma use to bring to "mercado" (markets) every morning. It is 100% ecologic, you can bring them to supermarket and they really can hold more weight than any horrible plastic bag. I love them, and actually use them to do my groceries and to bring my lunch to work. There are many designs, colors, sizes and the best thing is that they do not represent any extra weight to your luggage.

What about bargaining? Well I always ask if you would go and bargain to Walmart cashiers? You would not right? I understand some people find it funny, even they compete within each others to see who gets the best price. I would totally bargain if it is something made in China, just because the massive production. But honestly if it is a hand craft, try to pay the price, if is an art, support it, it would be a shame that all those artisans would stop their tradition because it is not business anymore. Just a personal opinion, I also get that, now they increase the price because they just "know" you will bargain, but I would just ask to pay for the right price, they are valuable things and you will be supporting families that do this for living, you will help to keep being a heritage one generation to the next one.

And, finally in my title I used the word "Atrapa-Novios" (Boyfriend - Trapper) because I find this a very particular, fun little Mexican Toy that artisans do with dry palm leaves, and basically it consists on someone asking another someone to run the finger inside it, and when they pull to take the finger out, it is stocked! So you trap him/her.

So if you are coming to Cabo for these amazing time, be prepare, get ready to some party!! Here is the TOP 5 of activities for you, all the spring breakers =) Keep in mind I am actually ordering them in order of showing in. So the perfect day will be starting at Mango Deck with its margaritas, games, shows, and music all day long. After that you can get back to your hotel, and get ready for Rock and Roll! Go downtown and enjoy the night life of #Cabo.

1. Mango Deck - Open every day from 7am until 11pm. Contests start about 11am.

2. Nowhere Bar - Locals love this place, good for drinks, dancing and good music.

3. Mandala - Excellent party every night!

4. Pink Kitty - See and check if you like it, they are all in the same block.

5. Squid Roe - Well, this would be your last stop at night. I would say you will not find me there, most probably hahaha! But if you are looking for someone that likes to party until 5 in the morning this will be the place to find them.

Also, there is a little bar next to Mandala, it is called Saloon Saloon, I like it because of two things; first because they serve a little basket of peanuts on the tables and second, because the bartender gives a very good show on the bar, with fire and all!! Just need to order a set of shots. Peanuts, I know, mmm!!!

Remember in Mexico, you are considered "old" enough to drink at 18 years old, hence, all those young people taking advantage of the 3 years difference about legally drinking.

I am not quite sure if teenagers are looking in the website about places to go while their spring break in Cabo, must of them, probably are coming with friends that have been here and already know what to do. So if you are reading this and may be concerned about your kids coming to party, let me just tell you... it is not the environment, it is not what they offer to them or what they can or can not drink. It is what they have learned and how much you have been clear about their value as human beings and how emotions or problems could never be covered with addictions, they will only grow bigger. It is about teaching that little human that they are of high value, that they do not need to demonstrate how "cool" they are to anybody. It is about letting them know that it is o.k. to say no and also, it is "cool" to be unique.

I'd like to say I was a teenager not long ago, well... define long, any way, I remember my folks gave me limits and even prohibited things, but at the end, if I wanted I could have broken every rule they gave me... instead I chose wisely thanks to the good foundations they gave me as a child.

On the other hand if you, are in Cabo during this season and like to go and have different kind of fun than the "wet t-shirts contests" of Cabo, well, here is what I would recommend:

1. Morning jog on the beach

2. Fishing tour

3. Golfing

4. Fine Dining

5. Walk by the Marina

And at last, little bit of Rock and Roll at Cabo Wabo won't hurt anyone. 

So there, a little point of view from a local lady, sometimes feeling melancholic about those times when I could go on and on all night long with my friends from one place to the other jumping and dancing... but also feeling proud of myself being a girl that even if I some few, few times had more alcohol than what my body was able to resist, I always treated myself with respect, and demanded the other ones to do as well. I had a terrific time and never regretted anything.

Whales Watching

My dearest readers, this time I want to share with you the experience I had with a 40 tons animal with its calf in their most calm and caring moment.

During the winter, the gray whale comes all the way from Bering Strait to many spots of Baja California Sur, one of them is "Bahia de Magdalena" where they actually reproduce and give birth here as well.  You can choose between Lopez Mateos or San Carlos.

I went with friends and their kids, we all are locals in Cabo and for the most majority it was our first time to do this amazing trip, but fortunately one friend have done this before and acted as the perfect guide and food adviser. We took the road in the afternoon, the idea is to get from Cabo to Ciudad Constitución, and the best advice is to drive only at day time. Roads are very narrow and you may find some cattle animals on motion... be extremely careful.

Distance from Cabo San Lucas to Ciudad Constitución is 248 miles, and that will take you approximately 4.5 hours driving. So, starting point is Cabo San Lucas, which will take about 1 hour to get to Todos Santos. Then another hour to get to La Paz, which is the capital of Baja California Sur. Keep going up and you will find a region called, "El Valle" (The Valey), Las Pocitas, Santa Rita and your destination, Ciudad Constitución. It is all a great sightseeing as it is a valley, full of many agricultural towns, you will actually see local vendors on the road, I highly recommend to stop and buy all things you see, strawberries, oranges, figs, dates, asparagus, etc. There are some amazing plantations of sunflowers, cotton, chickpeas and wheat. There are missions, old time mine towns and various eco-touristic activities to do all along the Baja, but this time we are just focusing on the Whale Watching amazing tour.

Visit Baja Sur

Try to stay the night at Ciudad Constitución, we found "Hotel Cuatro Misiones" very clean, good service, little hotel, only $600 pesos per night. The idea is to wake up early in the morning and get to the bay (Lopez Mateos in my case), take the boat and see the whales as soon as possible, it is better early in the morning when they are in a better mood and not many boats are bothering their babies. You can get lucky enough to touch them, it all depends on their mood. But being just 6 feet away from them it is something else! So enjoy the bay, there are many birds as well, if you are a bird person, I am telling you may want to stay there all morning. Locals are very organized there, they have enough boats, big enough for big groups, and you will pay according to the people going in your boat. I have this phone number if you want to get quotations: 613 13 70336, it is directly with the boats union. Remember to wear sunscreen, a hat, and keep your camera ready for amazing pictures. Tour normally takes 2 hours.

After that tour, you are free to go! You can either go farther to the north, or go back, stay in La Paz, or Todos Santos. We, decided to stay one night in La Paz, as it happened to be the weekend of the Carnaval. So you imagine, all the "Malecón" (Side walk, bordering the ocean) full of people, fair, games, food, vendors... and of course music! It was fun and we had a very good time. Carnaval in La Paz is in February. We ate at a very nice restaurant, "NIM".

So I hope this gives you a better idea on what to do when planing to go and see the whales, it is really something your soul will enjoy, feeling so close to that amazing creature, just reminds you the fact that we are all, that all is us... that we are all part of an infinite universe and we shall as well, let our magnificence and peace manifests with all our environment.

Healing Souls

One of the most beautiful experiences I have ever lived in Cabo was being able to participate in the great program that Modu Seye and the team of Moduvated got up few days after Odile Hurricane impacted Cabo in September 2014.

Modu Seye is such an inspiration of consistency and braveness and the story about how he pursued his dreams makes you think that you should too, do whatever it takes to be there. He has become one of the most important personalities in Cabo, training and really making a difference in people's life.

Everyone loves him, admires him, and his charming personality works as a magnet to many of the ones that know him. This actually worked perfect for times of need in Cabo, Modu and the Moduvated team reached the people with resources and good hearts that were able to help rebuild and rebound communities bringing back smiles and hope to their hearts.

In three weeks Moduvated team was able to raise $67,262 USD, served 15 communities and fed over 3,500 families, and I was privileged to be part of that amazing team... I can just say that it was exactly what my soul needed, after seeing my beautiful Cabo in so much need and devastation, giving myself, my spirit and energy to this kind of actions felt like manna from heaven.

I met incredible people after this experience and now I train with Modu at the bootcamp. It is a real boost for having amazing days, to eat healthy and to be stronger and fitter, to have respect for your body... Bootcamp starts at 6am in Palmilla beach, and when you get there you can see the stars, your eyes use their full capability to run in the dark... and then, you witness the beginning of a new day, The Sunrise. We run, we jump, we do burpees, squats, etc. basically we get MODUVATED!!

"Dia de Muertos" Day of the Death in Mexico

I know that when my loved ones make an "altar" for me, it will be one full of flowers, my favorite ones, the Sunflower, but also the traditional ones, the Cempazuchitl Flower. On the "Dia de Los Muertos" they will make an Altar with my picture, my favorite things, they sure will bring cats, in any form or representation, there will be chocolate, pinole, atole de grano and strawberry with cream. Maybe some fruit like guanavanas, juaquiniquiles, changungas and and of course my favorite drink, Mezcal. They will also play music!! Luis Miguel, some Bosanova, Jenni and the Mexicats and Vanessa Paradis. Hope I have opportunity to be a writer, so in the altar there will be one of my books and maybe a little treasure that belonged to me. 

That is what we do in "Dia de Muertos" we remember and honor the dead ones, the ones we admired, we loved and have passed away. It takes place on November the first and the second. Families all over Mexico make an Altar at their homes, their offices, even in public spaces... and it is a tradition to do all together, family and friends reunited, sometimes with humor and always with joy. Also they bring flowers and "Ofrendas" to the cementery, a place that during this night, instead of being a dark and lonely place, turns into a sanctuary full of candles, people and magic.

The best and richest representation of this tradition takes place in the state of Michoacán. All over the state you will see all the altars, all the colors and smells. One of the main cities of Michoacán is Patzcuaro. And in Patzcuaro there is the famous lake called "Lago de Pátzcuaro" that has an island called Janitzio. People get together all around the lake, the island and the town and all night you will be surrounded by the lights of the candles, by the energy and feeling of the people, the living and not living ones, you are in that place and moment that the spirits are called and invited to visit their last home. Is in my personal experience one of the most fantastic moments of my life.

Go ahead and make an Altar if you wish to honor and remember someone cherished in this day, these are the ten elements you need to have a good altar or ofrenda:
1. Candles - Represent religion
2. Picture of the person - So everyone knows who is the altar for.
3. Flowers, use Cempazuchitl, and if you do not find it at your home, just any yellow, orange flower will do.
4. Salt - Symbol of purification.
5. Incience - Symbol of purification and a way to attract the spirits.
6. Paper (Papel de China) - Thin paper colorful and decorated.
7. Sugar or Chocolate Sculls (Calaveras) - Like a joke to the death.
8. Sweet Bread (Pan de Muerto) - Traditional delicious bread made with flour, eggs, sugar, butter, orange peels anise and yeast.
9. Food and Drinks - The ones your honored person used to like or love.
10. Other - Any object that will evoke the likes, the life and the essence of the honored one.

There has been always a wonder, a mystery about the after-life. No matter which side of the world, or religion we have. The Egyptians made massive tombs to their kings, made boats to help the deceased ones passed to the other life, there is one thing that is sure, after 5000 thousand years we are still talking about Egypt about Tutankhamen and all of their gods.

At the end of our lives, we may or may not have a future life, a continuation of our souls... some say we end right there, some others believe in reincarnation, maybe we will live in our happy place forever!! But all that is just nothing to be sure of, meanwhile let's live our only reality.  

It is in our closed ones that we continue to live, in their hearts and memories, it is how we make people around us feel that survives. It is the good we did to this world that will make us immortals.

10 Things to do when visiting Cabo

Yes, you should really consider coming to Cabo ASAP!! The town is getting renovated and many places have offered the lucky ones that are here some really cool opportunities!

Here is the list of things I would recommend to do if you visit Cabo any day soon:

1. Get the best activities reservation, at super discounts. My favorite place is Cabo Adventures, and yes they are open!
2. Enjoy a 50% discount at Arts & Sushi Restaurant by the Marina. They offer this discount during the month of October, and you should try the Tuna Tostada, mmmm!! Deliciosas! Or go to Ladies Night at Capitan Tony's by the Marina as well... they have amazing life music at night.

3. Get a super discount on Golf such as Questro Golf Courses!! Just bring a donation such as clothes, food or money to support the people affected by Odile Hurricane.
4. Go to the Beach and enjoy the view, the people, the music and some margaritas. Of course, the biggest tradition is Mango Deck and they also have discounts and happy hours!
5. Have the best Pescado Zarandeado, ceviche, or any kind of seafood at Mariscos Mazatlán, a restaurant full of life, locals and great service.
6. Have a delicious dessert at Señor Sweets!!! I always order the Lemon Pie Gelato or the Special Cinnamon Roll with chocolate and cream cheese... they are to die for!! well I sometimes order both of them jaja!! And they have discounts during October too!

MONDAY SEPTEMBER 15th. 2014 - Cabo San Lucas

Real life after Hurricane Odile hit Cabo

6:00 am Open door of bathroom where we were guarded for about 7 hours, to discover the damage of hurricane Odile in my friend's Home. 

7:00 am Cleaning Home, broken glass, sand, tree's leaves. Helping the neighbors. Cleaning street. Windows of cars broken, bags and bags of debris taken to the garbage container.

8:00 am Trying to communicate, to make phone calls. Realizing we were totally incommunicado!

9:00 am Taking a drive outside to the streets of Cabo, get to my other friend's home and discover Cabo was devastated by the Hurricane.

Rest of the day: Cleaning glass, drying wet clothes, accepting things and news as they were coming, living the present, not knowing what is going to happen tomorrow.

After days of not having power, water, not being able to communicate with your loved ones, people in Cabo are now getting all the services. There is soooo much people in need but government and donations have helped a lot. 

We have all learned to talk to other human beings without a cell phone, we have appreciated now more than ever a glass of water, a shower a cold beer. But most importantly we have been able to experience the moment, the now! Nobody, during the strong wind of the hurricane was taking a selfie, or checking facebook or playing candy crush.

Please be here, be now! Love your life, be thankful. Do not hold your life in the tomorrow, in your agenda and your plans of the future, they may just disappear from one day to the other.

Cabo's facts after Odile

On September 13, 2014, it appeared as if Hurricane Odile would miss Los Cabos and we would experience only some wind and rain overnight.  However, at the last minute the storm veered to the East and the night of September 14, Hurricane Odile hit a largely unprepared Cabo San Lucas directly as a powerful Category 3 Hurricane, the strongest hurricane ever to make landfall in the Baja Peninsula of Mexico.

Hurricane Odile hit with sustained winds of up to 125 mph, causing major damage to the city, the resorts, and the infrastructure of the entire state of Baja California Sur.  An estimated 92% of the State's population was left without power or water, and most of Los Cabos is still without.  30,000 tourists were in the Baja during the storm, and airlift is still ongoing.  All remaining tourists are reportedly well with food and water.

The army are doing a sensational job of cleaning up and getting food and water to people in need, though not all areas have been taken care of yet. Evacuation Update

Within 36 hours of the storm, the Los Cabos Airport was back in operation for non-commercial flights.  The military, later joined by commercial airlines from the USA, Canada and Mexico, began evacuating the remaining tourists on Tuesday, September 16.  All tourists that want to be evacuated are now on their way home.  Some (bless their hearts) are staying behind to help and show support.

Airport Update

The Los Cabos International Airport (SJD) did not suffer any infrastructure damage, but there was damage to the terminals and to the control tower.  The airport was open for about a week for humanitarian flights, but now closed again to focus on repair.  It is projected to open again for normal traffic by approximately October 4th, 2014.  The smaller Cabo San Lucas Airport did not suffer damage to the runways and has been operating normally since September 17, but days only at this time.

Utility Update

Nearly 1,000 workers are working feverishly to restore power and water to the Los Cabos area.  At this time, 85% of the power in Northern Baja California Sur has been restored, and about 80% of the power in La Paz.  The power in Los Cabos is more challenging as about 800 power poles need to be reset.  Early estimates of 2-3 weeks seem to have been overstated, as power has already been restored to 45% of Los Cabos.

Telmex has restored telecommunications (telephone, internet) to 100% of the area and no more lines at the gas stations.

Some water has been restored to Cabo - about 40% of normal capacity.  They are testing the desalination plant and expect full water recovery this week.  A very welcome thing indeed.

Security Update

After a couple of days of much publicized looting of stores, official sources and reports from the ground agree that things are now under control and the over 1000 military units are now keeping the peace.  The government says that rumors of a jailbreak were not true.

Business Update

Baja Cantina Marina, Mango Cantina, La Davina and Cabo Cantina are open for business with food and cold drinks available.  Reports are that Solomon's Landing, Mango Deck, Cabo Blue and Captain Tony's will be reopen again probably tomorrow.  Many other restuarants will remain closed until the tourists return since all of their clientele was tourists. Beach vendors have been being spotted again.

6 bank branches have reopened, and 3 ATMs.  Several gas stations are open, and 6 of the area's 19 grocery and department stores have reopened, including Wal-Mart.  Some Cabo San Lucas fishing charters are reporting they are ready to go fishing.

The East Cape area was largely unaffected and those businesses are running as normal.  La Paz is also largely back to normal operations.

Humanitarian Update

Hundreds of tons of food and water have arrived to the area by land and sea and are being distributed to those in need.  The Mexican Red Cross is leading the efforts together with the military and collection stations have been set up throughout Mexico for goods.  However there are thousands of homeless people in the colonies after the storm, and so many more who have lost so much that it will take much time to rebuild their lives.

The local relief organizations are badly in need of funds to assist the families they represent.  You can make a donation directly to the Mexican Red Cross through their website or by using a registered US based foundation such as the International Community Foundation who works together with the local relief agencies in Baja California Sur.

There are many other unofficial organizations collecting funds as well, which is great.  But we recommend officially recognized organizations.

How Else You Can Help

While the tourist infrastructure may be up and going strong by October, the humanitarian needs of the local people will be high for much longer.  The needs of the local people are great, and without income it will be very difficult for them to recover.

As soon as Cabo is ready to welcome you again, there is perhaps no better way to contribute to the recovery than with your tourist dollars.  Every margarita you drink or taco you eat gives a hotel or restaurant worker a job, who then uses that money to buy things at the store, giving the store employee a job and money to spend to buy things at another store, and so on.  The impact is felt through this small community in so many ways.  Cabo needs you, especially in this already low season.  We hope to see you in October when the resorts and town are ready to host you.

Hotel Damage & Reopening Updates

Many hotels in Cabo fared pretty well during the storm, reporting only minor damage.  However, they still have some clean-up to do which will keep most resorts closed until about October 1st.  By this time many resorts predict that they will open, and many more by October 15.  A few were heavily damaged and will remain closed until October 31 or longer.  Here is a list of the official estimates we have received so far:

Recommendations

Currently, Cabo is not ready for touristic arrivals.  There is a lot of work to do.  If you have vacation plans during this next week or so, you will want to contact your hotel and airline and change your dates to at least October and at least until after the power has been restored for several days.  In October, there will still be work going on in Cabo, but as long as your resort is open for business, there will still be plenty to enjoy.  The tourist infrastructure always comes back quicker than the local areas, and Mexico is one of the world's best at this.  You will truly be surprised to see how quickly Cabo is restored, given the severity of the hit.

The beaches, the sunshine, the pool, the food, and the margaritas will all be here.  The marina is reportedly without structural damage and most boats were unharmed.

Chiles en Nogada - VIVA MEXICO

No dish on earth screams MEXICO like this one, Chiles en Nogada is one of the most Mexican dish and it is considered a real treasure in the culinary art of our country, they are not easy to prepare, and its ingredients are most likely to be found during the month of September.

Chiles en Nogada

Chiles en Nogada is the traditional dish during the Independence party, on September the 16th. The reason why this is sooo Mexican is, first of all because the protagonist of this recipe is the Chile, of course! and second, it is the colors on our flag represented in this amazing colorful and festivity plate and third, maybe the most important one, is the historic facts about it.

This green, white and red combination of salty and sweet flavors was cooked by the Agustins Nuns to honor Agustín de Iturbide for having successfully signed the Independence of Mexico. They wanted to be creative, they knew they were witnesses of a very important moment of the History, and they became part of it by inventing this so representative, so rich and yes, a little bit complicated dish.

Chile Poblano, is a mild chili pepper originated from the State of Puebla. Nogada is after the word "Nogal" the tree of the walnuts, basically the sauce is made with walnuts, an elegant and velvety cream that is place on top of the Chile.

Before you get in action, please remember this is a very elaborate dish, this is our ancient Mexican way of cooking, and that means a very large kitchen, with several women, all cooking, many hours there, talking, bonding and enjoying the process. So if possible try to enjoy the process of cooking Chiles en Nogada with friends and family. If not, start with making the Nogada a night before, that will make things easier on the day of cooking.

This is my family recipe, as I do not like to eat meat they are meatless, but I can tell you it has been proved and approved by my friends. Try them, your guests will be delighted and your table will look as colorful as Mexico!

Ingredients

Serves 12

• 12 Big Poblano Chile. 
• 12 Toothpicks

For the Filling:

• 2 cups of previously cooked of veggie meat, such as Textured Soy or Seitan (If you go for the meat version, just use ground pork and or beef)
• 2 garlics finely chopped
• 1/2 large onion, finely chopped
• Salt to taste
• 2 tbsp. canola oil
• 2 tpsp. finely chopped parsley
• 2 plum tomatoes, cored, peeled and finely chopped
• 2 tbsp. raisins
• 2 tbsp. finely chopped blanched almonds
• 1 Granny Smith apple peeled, cored and finely chopped
• 1 Pear, peeled, cored and finely chopped
• 1 Peach, peeled, cored and finely chopped
• 1/2 Ripe plantain or if not, !/2 banana.
• 1/2 tbsp of cinnamon powder
• 2 leaves of bay
• 2 cloves

Peeling the Walnuts

For the Walnut sauce:

• 2 cups of milk
• 2 cup of walnuts, peeled and chopped*
• 1 cup of Queso Fresco (rich, fresh cheese)
• 1 cinnamon stick
• 1 tpsp. of sugar
• Salt and white pepper to season

Plating:

• 2 cups of Pomegranate grains
• 1 cup of chopped parsley

Instructions

Make the filling: Heat a saucepan with the oil, add the chopped onion and garlic, cook until soft. Add parsley and tomatoes, cook until tomatoes break down, about 5 minutes. Add the previously cooked and drained soy or seitan, also add the leaves of bay, the clove and the cinnamon powder. Keep stirring and then add the raisins, almonds, apple, pear, peach and plantain, cook stirring occasionally until fruit is cooked through and mixture is thick, about 10 minutes. Remove from heat, and season with salt. Set aside. 

Make the walnut sauce: Place walnuts in a saucepan, and cover with water; bring to a boil, and cook for 5 minutes. Drain and use a kitchen brush to peel away most of the skin from walnuts. This is very important as leaving the peel will make your sauce taste sour. Cover the peeled walnuts with the milk for 6 hours or over night. Next, transfer walnuts with some of the milk to a blender, along with queso fresco, cinnamon and sugar, purée until very smooth and thick, at least 2 minutes. You can add more milk but make sure the mix is not too liquid, has to have a creamy consistence. Season with salt and transfer to a bowl, cover and refrigerate for at least 30 minutes before using it.

For the Chiles: Heat broiler to high. Place poblano chiles on a foil-lined baking sheet and broil, turning until blackened all over, about 20 minutes. Transfer chiles to a bowl and let cool. Peel and discard skins and seeds, then make a small cut along each chile, just an inch, try to keep  the chiles form is intact. Remove the bay and clove from the filling and prepare to fill the Chiles. Place 2-3 tbsp filling inside each chile, and close. You can use a toothpick to keep it closed, just tell the guests to take it away from their plate.

For plating: place each Chile on a plate, cover with the Nogada Sauce, and top it with Pomegranate and the chopped parsley. This plate is served at room temperature, the nogada will always be kind of cool, so the Chile can be warm to serve.
